Saturday we had a relaxed day of chilling at the house, and then going to a creek on the Trace. We had a good time wading around in the water.
Amaus seemed to find real fun in throwing sand and pebbles. He would throw a little and dance a little!
Then we went Sunday to hang out with family in Woodville. We rode four wheelers and played in the creek there as well! It was a creek weekend!
Monday evening we decided to go on an evening firefly hunt, but only spotted two way up in the trees at the back of the pasture. We are going to have to go again soon! I have great memories of hunting fireflies or "lightning bugs" as we called them, when I was a little girl. When we visited my dad in the summer, he had a neighbor with a large yard with tons of flowers. We could fill up a mason jar with tons of the little things. Hopefully we will be able to do that around here soon!
Okay- Now for the meatloaf! This is the world's best meatloaf! I am not kidding!
Chop up onions and peppers, and a fresh tomato
I like to use 2 lbs of ground turkey meat- but beef works too.
Mix together your meat choice, chopped ingredients. Add 2 eggs, 3/4 a cup to 1 cup of bread crumbs, and your favorite seasoning.
Then add 3/4 a cup of some kind of juice. You can be creative on this one. Jalapeno juice is great. I used tomato juice. Put in a greased 9 by 11 inch dish.
After that you cook it at about 375 degrees for about 40 mins. Check the center and be sure it is cooked through. Then this is the yum part! Combine one cup of ketchup and 3/4 a cup of brown sugar in a bowl. Spread it over the top of the meatloaf, and then cook it for about 15 more minutes on 325 degrees. (until topping is firm)
I forgot to take pictures of the finished product. The kids LOVE it.
They get so excited when it is meatloaf time!
Adoption Update:
We had our first "conference call" with the program social worker for Peru, and the ministry we are working with to adopt, yesterday. We were were approved and welcomed to the Peruvian adoption program there! It has been awesome to talk with our program director. She considers her job a ministry. It is incredible to have someone who knows what they are doing, but also is so in love with Jesus and anxious to serve. The next step will be having our home study done. We are praying about which agency in Louisiana to go through for that. It is expensive and we want to be sure to choose the right one. Hopefully we can have the hometudy process started this summer. It is easy to feel excited about what is to come! We all have to calm ourselves and be reminded that this whole process could possibly take 2 years.
God is in control, and we want His perfect timing.

Oh man, y'all need to come to our house for the lightning bugs! They're EVERYWHERE. We've been catching them and putting them in mason jars too. The kids love it.

We spent a lot of summers catching fireflies when I was little. :)
I might have to try your meatloaf recipe~ that's one of Larry's favorite meals.
